Shredded Brussels Sprouts Salad with Pecans and Dried Fruit

Recently I created a Shredded Brussels Sprouts Salad with fresh local naturally grown veggies I picked up at a winter farmers’ market. Brussels sprouts keep well through the winter months; I think though, we are seeing the last of them until next Fall.

I wanted to do something special with them to celebrate their season. But it’s getting warm outside and that screams SALAD for me. Turns out Shredded Brussels Sprouts Salad is a fantastic way to enjoy these little cabbages.

Many people cringe when you mention Brussels sprouts or even cabbage. Frankly I think it’s because of the way it was prepared for them in the past. Probably boiled in the classic corned beef and cabbage dish. Not very flavorful, in my mind. In our home, we like to gently toss wedges of cabbage with olive oil, season lightly with salt and pepper and roast them in the oven. Roasted cabbage has a delicious sweet flavor and the wedge edges are crispy.

Shredded Brussels Sprouts Salad – Think Coleslaw

Unlike a creamy coleslaw, this salad uses an olive oil and balsamic vinegar dressing. Add honey and brown mustard forย a sweet-sour tangy sauce. Very little salt and no refined sugar here.ย  Much healthier!

You can easily shred the Brussels sprouts in a food processor. If you don’t have one, slice them in half and then cut into thin pieces. Chop further if you want even smaller bits.

And that’s pretty much it! Mix together and let it sit in the refrigerator for a few hours until the flavors blend. Easy as can be! And I bet even your Yuck!-Brussels-Sprouts eater will enjoy it ๐Ÿ™‚

Shredded Brussels Sprouts Salad with Pecans and Dried Fruit
Instructions
  1. Whisk together olive oil, balsamic vinegar, honey, brown mustard, salt and garlic.
  2. Cut ends off Brussels spouts and remove outside leaves. Slice sprouts in half. Place in food processor and pulse processor 10-15 times until sprouts are shredded.
  3. Toss together shredded Brussels sprouts, pecan and dried fruit. Mix in olive oil and balsamic vinegar mixture.
  4. Cover and refrigerate for 4 hours, allowing flavors to blend together.
  5. Best enjoyed at room temperature.
Recipe Notes

I used my own dried pears for this recipe. Next time though, I'm going to try dried cranberries.
