Recently I created a Shredded Brussels Sprouts Salad with fresh local naturally grown veggies I picked up at a winter farmers’ market. Brussels sprouts keep well through the winter months; I think though, we are seeing the last of them until next Fall.
I wanted to do something special with them to celebrate their season. But it’s getting warm outside and that screams SALAD for me. Turns out Shredded Brussels Sprouts Salad is a fantastic way to enjoy these little cabbages.
Many people cringe when you mention Brussels sprouts or even cabbage. Frankly I think it’s because of the way it was prepared for them in the past. Probably boiled in the classic corned beef and cabbage dish. Not very flavorful, in my mind. In our home, we like to gently toss wedges of cabbage with olive oil, season lightly with salt and pepper and roast them in the oven. Roasted cabbage has a delicious sweet flavor and the wedge edges are crispy.
Shredded Brussels Sprouts Salad – Think Coleslaw
Unlike a creamy coleslaw, this salad uses an olive oil and balsamic vinegar dressing. Add honey and brown mustard for a sweet-sour tangy sauce. Very little salt and no refined sugar here. Much healthier!
You can easily shred the Brussels sprouts in a food processor. If you don’t have one, slice them in half and then cut into thin pieces. Chop further if you want even smaller bits.
And that’s pretty much it! Mix together and let it sit in the refrigerator for a few hours until the flavors blend. Easy as can be! And I bet even your Yuck!-Brussels-Sprouts eater will enjoy it 🙂
